Maple is the paler, harder surface and the traditional butcher's choice; walnut is darker and shows an engraving with more contrast. Hand wash only, dry on edge, and re-oil about once a month. A block this heavy will crack if it's allowed to dry out. Allow 7–10 business days from proof approval.
