Bamboo is the everyday workhorse: hard, light and the most affordable, which makes it the board people actually cut on. Maple and walnut are heavier hardwoods that live out on a counter and take a deeper, higher-contrast engraving — the choice for a wedding or housewarming keepsake. Slate boards serve rather than chop, since a knife will scar the surface.
